The Naniwa Chosera 600 whetstone uses magnesia as binder for the abrasive, in this case white aluminium oxide.  

  


The Chosera stones do not soak up any water so the stones do not need to be sprinkled with water frequently. This makes Chosera stones rather easy to sharpen with. Because of their hardness you will not cut into the stone easily and sharpening with these stones will take less time. Their hardness make them a good choice for knives made from hard steel.  
  


Splash with water before and during sharpening, do not soak or store in water.  
  

**About grit sizes**  

Whetstones come in various grit sizes. The higher the number, the finer the grit. A finer grit results in a sharper knife. Sharpening a really dull knife on a fine grit will take much time, so you will need to treat it on a coarser grit first.  
  

  



* 120 - 600: Appropriate when real dull knives need to be brought back in the right shape

* 800 - 1,000: Appropriate to sharpen knives that were already in a reasonable state

* 2,000 - 3,000: For a result sharper than most knives are when they leave the factory

* 5,000 - 12,000: To polish the knife and get a razor sharp edge



**Remarks pertaining to Chosera sharpening stones**  

During manufacture, Chosera sharpening stones are bound with magnesium. This superior production method guarantees superb results. However, these magnesium-bound stones are more prone to developing hairline cracks. To prevent this from occurring, it is important NOT to use too much water when wetting Chosera sharpening stones. So Chosera stones should NEVER be left to soak in water for a prolonged period of time! It is also important to dry these stones thoroughly after use and store them in a dry, dark place.

Ik heb inmiddels een hele serie Naniwa waterstenen. Ze zijn niet goedkoop (hoewel de prijzen van Knives and Tools voor Naniwa zover ik weet de laagste op internet zijn) maar van zeer hoge kwaliteit. Als je topmessen koopt moet je ze ook met topmateriaal onderhouden...

Uitstekende snelle levering. Product is degelijk verpakt waardoor kans op beschadiging klein is.
De Chosera 600 neemt zoveel materiaal af dat zelfs (on)behoorlijk mishandelde messen in 10 minuten weer een mooi gaaf snijvlak hebben, en ik niet verwacht snel nog een grovere steen nodig te hebben. 
Ik gebruik deze steen in combinatie met een 2000 en een 5000 Chosera en ben met de scheermesscherpe resultaten meer dan tevreden. Kortom, het kost wat, maar dan heb je ook echt wat!

Heb in het verleden goedkopere wetstenen gehad en kon hier niet mee uit de voeten. Met een messenslijper van Chefs Choice werden ze wel iets scherper, maar ook niet echt. Daarom toch maar de stoute schoenen aangetrokken en de Chosera gekocht. Lang nagedacht welke korrelgrootte en uiteindelijk besloten tot de 600 en 2000. De eerste keer had ik liever een 400 of minder gehad, want mijn messen waren botter dan ik dacht en het duurde wel even voordat de scherpte terugkwam. Nu verwacht ik echter nooit meer een grovere korrel dan de 600 nodig te hebben. Als je kijkt naar de instructiefilmppjes kan het eigenlijk niet mis gaan. Mij lukt het inmiddels zelfs met een hand te slijpen en het resultaat is verbluffend. De 2000 korrel is fijn genoeg wat mij betreft, maar ik begin inmiddels aardig verslaafd te raken en sta er niet van te kijken als ik binnenkort een 5000 korrel aanschaf. Een advies nog. Ik was botte messen gewend en heb mezelf daarom wel wat rare snijmethodes aangeleerd, die ik nu echt niet meer kan toepassen zonder naar de pleisters te moeten grijpen. Ook messen los in de lade leggen (wat sowieso niet slim is i.v.m. het bot worden van de messen), wordt nu echt link voor mensen die nietsvermoedend iets pakken. Mes aanraken = bloeden. Ik vind het echte een goede investering. Levering etc was supersnel.
