Een prachtig mes, het damaststaal en niet te vergeten het heft  zijn een lust voor het oog. Het mes ligt goed in de hand, is verrassend licht en snijdt als door boter. Tomaten kun je echt millimeter dun snijden. Het is extreem scherp, (maar dat willen we ook)

Alleen, de hiel van het lemmet heeft me al een keer gebeten, deze heb ik daarom wat afgeschuurd. Het is niet nodig dat het daar zo scherp is. 

Natuurlijk niet echt goedkoop, maar deze kwaliteit rechtvaardigt het wel wat mij betreft.


Das erste Messer war leider nicht ganz sauber am Griff verarbeitet (war etwas rauh). 
Ist aber von Knivesandtools schnell getauscht worden. Wie immer sehr guter Service.
Das neue Messer ist Rasiermesser scharf und sauber verarbeitet.
Alles in allem bin ich sehr zufrieden damit.

Positives:

1) Die Kanten am Rücken sind leicht gerundet, sodass das Schieben des Schneidgutes vom Brett ohne viel Widerstand funktioniert.

2) Der Griff aus Aschholz ist optisch sehr ansprechend und liegt gut in der Hand. Dicke, Länge und Form ermöglichen angenehmes Arbeiten, die Balance ist sehr gut.

3) Die Schneideigenschaften sind sehr gut, die Klinge gleitet leicht durch das Schnittgut. Da ich das Messer erst seit Kurzem besitze, kann ich über die Schnitthaltigkeit keine Angaben machen. 

4) Der Griff saugt sich beim Abspülen kaum mit Wasser voll.

Negatives:

1) Das metallene Endstück des Griffes passt im Durchmesser nicht ganz genau zum darüberliegenden Holz, d.h. man spürt einen kleinen Versatz, wenn man mit dem Finger darüberstreicht. Die Verarbeitung am Klingenende des Griffes ist jedoch makellos.

2) Bereits nach wenigen Malen der Benutzung weißt das Damastmuster kleine Krazter auf, die das darunterliegende gläzende Metall sichtbar machen. Obwohl man dies nur bei genauem Hinsehen erkennen kann, ist es unschön. 

3) Der reguäre Preis (429.-) ist sehr hoch :-)

Fazit:

Wer seiner Sammlung eine technisch ausgereiftes, sehr gut gearbeitetes und scharfes Messer hinzufügen will, ist mit diesem Modell gut beraten.
