The **Böker Damast Black vegetable knife** - the name says it all - is specifically suitable for peeling vegetables like potatoes (but it's also great for peeling fruit). Its short, narrow and finely sharpened blade allows you to peel extremely thinly. This prevents any unnecessary loss of vitamins and minerals!


The wooden handle is the perfect length, so the end fits comfortably in the palm. Therefore you don't have to rest your index finger on the blade. A great safety feature!


## Optimal sharpness retention


Thanks to the hard VG-10 steel, the edge will stay razor-sharp for a very long time. This means you don't have to re-sharpen it constantly. However, it goes without saying that it's important to properly [maintain your kitchen knife](/en/ct/maintaining-a-kitchen-knife.htm). For instance, we recommend that you only clean the knives by hand.


The knives in the **Böker Damast Black** kitchen knife collection have stunning, razor-sharp blades. They are made from 37 beautiful layers of Damascus steel, with a strong VG10 core. The wavy accents of the folded steel are also reflected in the Japanese-shaped multiplex handle.
