Put the pan on the heat source and sprinkle a little water to check if the pan is hot enough. Once the drops of water start dancing in the pan you have reached the best cooking temperature.
Try to bake high-protein products (meat and the such, but also potatoes) without oil, butter or other fat. The product will cook and sear itself shut, so you’ll get a delicious crispy crust. It is very tempting to try to remove the product from the bottom surface of the pan when it is sticking to it. You should, however, exercise some self-control. It will work out!
Good cleaning is essential. Straight after baking put some detergent in the pan and clean it with a brush and some water. When you don’t clean it properly it will build up and be very hard to clean. Removing it with kitchen paper won’t be enough!
Do not use olive oil for frying. Olive oil is delicious in salads and pasta, but for baking it is definitely not suited! With temperatures of 120 degrees Celsius or higher, harmful chemicals are released. Sunflower oil, coconut oil or good old butter are better alternatives.
