Why a "Laguiole" knife?
For me, they are of very high quality in terms of steel, mechanical and finish (handwerk!) and they look just gorgeous, both the elegant and the more robust models. You can get there simply along for the day as werkmes, but also in a restaurant ("Sir, you have a better knife than we can offer").
I do not need a toolbox in your pocket and feel no Survival K-Command-SEAL.

I opted for a copy of the Nature series Fontenille Pataud, because the mix of functional / beautiful / durable, and because of the lock of this knife.
OK, the "slip joint" (semi-) locking claps not easily close to use, but the back-lock latch, standard in the Nature series, is completely impossible. A great advantage is, that the knife is thereby much lighter open / close.
For the handle I chose snake wood (wood letter), with 3800 on the Janka scale is one of the hardest woods, virtually indestructible, and also very beautiful.
