Great product - I am not a professional, just a keen cook at home. This comes with the polishing paste and I use it quickly before I start cooking. It maintains a sharp edge to my Kai knives, which are pretty much used daily. I like the fact that it is safe for the knives (for a novice) to use as if you make a mistake in a stroke, it is only leather and will not damage the knife. I do 5/10 strokes per side and that is enough to keep thins sharp!

Great for giving the final polish after sharpening and if used with the correct paste it does a far more gentle hone than a fine steel on Japanese knives.
