This Kai Shun **steak knife set** consists of fine steak knives with a blade of 32-layer Damasque steel. The V-Gold-10 core gives unsurpassed cutting properties. These knives have a hardness of 61 ± 1 HRC, which makes them exceptionally hard and able to retain their sharpness for a very long period of time. The handle is shaped to give a stable and solid grip. Their appearance and cutting properties make these an absolute joy to use.
