This Kai Tim Mälzer Kamagata Santoku was designed by the famous German chef Tim Mälzer and produced by the Japanese knife experts at Kai. It is not the first time Kai and Mälzer work together. The last time they joined forces this led to the amazing Kai Shun Tim Mälzer Premier collection, which turned out to be a hit. We expect nothing less from this new Kamagata collection!
Kamagata: a remarkable shape
In Japan Kamagata represents a specific type of shape for a knife. The traditional Kamagata Usuba has a straight edge with a suddenly curved spine. The knives from the Tim Mälzer Kamagata collection are based on these knives, but do have their own specific characteristics. This santoku, for instance, has a sharp tip and a slight curve in the edge. This combination makes the knife perfect to make rocking movements with.
Stainless steel
The blade on this Kai santoku is made from 1.4116 stainless steel. The main advantages of this steel are that it is extremely stainless and easy to sharpen. The stylish black full-tang handle, is made from polyoxymethylene (POM), a sturdy type of plastic.
