This Wüsthof Ikon double serrated bread knife 23 cm can definitely be called an iconic cutting tool. This relatively exclusive Wüsthof collection is mostly characterized by the remarkable handle material that is used. The handles are namely made from African Blackwood. This is incredibly valuable wood, that is mostly used to produce wooden instruments such as a oboes and clarinets. The grains in the wood make each product unique.
Even though the handle is in this case the highlight of the knife it doesn't mean that no attention was paid to the blade. As with all Wüsthof collections the blade is made from X50CrMoV15-steel, which is sharpened with laser-precision via the Petec method. More sharpness is impossible. If the steel loses its sharpness after a while, the steel can also be sharpened.
A second advantage of the blade is the crop. This doesn't fully run up to the edge, but does clearly separate the handle from the blade. As such sufficient safety is provided, but you can still use the entire edge. It comes in practical when you want to sharpen the knife.
