Hand-forged Japanese paring knife with a  blade length of 10 cm from the Eden Kanso Aogami series.

This **Eden Kanso Aogami hand-forged paring knife** is a Japanese knife from the Eden Kanso Aogami collection. A lightweight, small knife for the precise cutting tasks. Because of the compact size the knife feels great in hand. The blade and handle are perfectly balanced. As such you have a lot of control over the knife.

This hand-forged Japanese knife has a 10 cm long blade and is made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type.

The classic red sandal wood handle is asymmetrical. As such it feels great in hand.

## Sharpening Eden Kanso Aogami kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

This is the 4th in this range I’ve purchased, these are great single bevel knives that can be kept razor sharp with a suitable water stone.  They just need a frequent oiling.

Wat een heerlijk mesje. Nog niet veel in gebruik gehad maar een uitje snijden is nu wel heel leuk geworden. Ligt perfect in de hand zeker voor een mannenhand. aanrader dus. Fijn om het erbij te hebben voor het kleinere snijwerk. een woord: tevreden. En uiteraard perfect alles afgehandeld door knives and tools. Nog even telefonisch contact gehad voor een beschermhoesje, was ik vergeten te bestellen. maar ook netjes en vlot ontvangen. dus bestel wel een beschermhoesje er direct bij. blijven zeker je vingers heel en wees voorzichtig.

Had al een ander mes uit deze serie, nu het officemes voor het wat fijnere snijwerk. Ligt lekker in de hand, snijdt heerlijk en makkelijk weer vlijmscherp te krijgen.
