Good quality steel holds the edge, first sharpen using set up machine to maintain angle works well. On the down side thought it was a bit heavy and blade could be thinner. Overall good value for money. I also bought the 6" bladed knife which i think is a better buy. Hope this helps

Nice product and sharp. Would love to know however, what level of grain was used to polish the edge?

I work in kitchen an use chef's knife every day. Was looking a long time for exact knife, and decided to get Eden. Really sharp out of the box. Did sharpening on eden 5000 water stone and it's sharp as razor blade now, because like my knifes really sharp. And it's stays sharp for long time. Just slice and dice.
