This handmade knife made with carbon aogami steel is a wonderful piece of craftmanship. The level of workmanship is wonderful, the full two-type wooden handle, the finish. And not least it is razor sharp. I don't believe it is possible to get a handmade Aogami steel knife at better prices.
Knives and Tools have provided excellent service, also when I needed some help with other purchases and they get my 5 star recommendation.
I use a foam pan-cleaning pad with a rough side to give it a little polish with some food oil to keep it in good condition.
A great impression all around.

In just two words: excellent knife!

It is very sharp out of the box but even after a thorough wash, it left a metallic taste. The solution to this was to force patina on it with hot vinegar. This in turn quite changed the looks: the black fell off and the knife is a medium shade of gray now.
With respect to cutting, it is simply superb. It glides through tomatoes with just its own weight. Be very careful!
I personally doubt a better knife could be had for this kind of money.

You will not find any other blue paper steel knives made to this quality and price. Given knives of this series are much cheaper than damast knives, equally sharp/hard but less fancy, they are my first choice. I'm glad I bought it.

The knife is beautifully designed and of very high quality. It is razor sharp which is great but one need to be extra careful as the blade is very hard and very thin easy to chip. Which I managed to do on a fish bone. Fortunately easy to sharpen and I managed to repair and now as good as before. The blade is relatively easy to get scratches or spots so need to care about that but it is not anything that should scare anyone away. This is a great knife that makes any cutting work a pleasure.

It takes some getting used to, but I knew where I started.
The fantastic sharpness, almost ritual treatment, which is what I wanted, and yes, my best knife until now.
A bottle of Camellia oil can not hurt to keep this type of steel.

An impressive piece of steel! Unfortunately, there seems to have been sharpened with the belt sander, the steel can do more by far than what you see by default. Resharpening I thought was a necessity. Unfortunately, this is not so easy, because the steel is very tough. It took me several hours. For this, you then have a blade that should remain sharp for a long time (I can but only in a couple of weeks really judge). This knife has become my favorite tool in the kitchen right away.

This order has its history: In a Japan vacation, I tried to get hold of an original Japanese kitchen knives. Only once we wade in a knife factory, but before I could decide to purchase, the rep already blew for departure. On the Ginza, the main shopping street in Tokyo, there were only European knife from Wusthof, Zwilling and others - so nothing!
That is why I am now even more excited that I kind of Japanese chef's knife find exactly in the mail!
This Kanso Aogami chef's knives are razor sharp - I've never had such a sharp knife in his hand - and absolutely gorgeous! Of course, these knives are quite sensitive, but if you follow the care instructions, there is no problem! I am excited about these knives - and the unbeatable price!

Christmas gift for my nephew, it uses more than the knife, he uses a Japanese oil to protect the blade, not stainless, and yes that is his only flaw, I am very satisfied with this purchase.

This knife is really super sharp and cuts everything that is dished up in the kitchen. Even skewers were, without my noticing it, simply cut into splinters, when I cut off the flesh.
The knife is used daily (look the other had retired) and is done only in the ceramic sharpening rod, which perhaps is not necessary.
After use, it is washed by hand and lightly oiled. Rust was not a question. Well its been a few spots patina formed.
Take iron was not determined, but it is also not used to cut fruit.
The service from N & T released agrees fail this time. Notwithstanding the payment (bank transfer) was done, I did not notice this. On the contrary, I received an email stating that the order had not yet been paid.
Response led to the knife the next day was already worried.
Where or what was missed, however, was left open.
All in all I remain a very satisfied customer.

Nice light several times turning top blade and again focused properly use it every day how that continues in the long term is to wait and see.
There is some discoloration on the side, but even with abrasive pad and then just as grease is good again.

A good chef's knife. I use it professionally in the kitchen.
However, the knife was not very sharp inside (no problem for me as I do every week itself in love with a whetstone.
Furthermore, the light, which makes it very nice for cutting, but also gives you the feeling that the 'kwetsbaar'is.
Keeping yourself well because it can rust and discolor.

I have my knife Aogami now about two weeks in succession, and I can only say that this is the sharpest knife I've ever had.
After 2 weeks of use, there is still no damage to see. To the cut The hard blade adheres so well!
This knife is a must and I will certainly buy more.
