The EZE-LAP DMD/ C Kit is a sharpening system including five sharpening stones, four of which have a diamond surface. The advantage of the diamond as an abrasive is that you quickly remove material. Moreover, the surface remains beautiful and even and the stone lasts a very long time.
Use of the sharpening system
The method of the sharpening system is simple. Screw the sharpening angle guides onto the clamp and secure your knife in it. Then pick up the required sharpening stone with a guide bar. Insert this bar through the opening with the angle at which you wish to sharpen. You have the choice of three sharpening angles: of 15, 20 or 25 degrees. Place the sharpening surface of the stone on the edge of your knife and start sharpening by pulling the sharpening stone over the edge of the knife. Exactly the opposite of sharpening on a sharpening stone, where you pull the knife over the sharpening stone. Because the bar runs continuously through the guides at the same height, you always sharpen at the right angle.
It is advisable to start sharpening with a slightly older knife. Diamond sharpening stones namely need to be sharpened as well. You will notice that the surface of the sharpening stone is initially somewhat coarser in texture. This disappears after sharpening some knives and the stone will reach its definitive effect. Sharpen delicately and let the stone do its work without putting too much pressure.
The diamond sharpening stones from EZE-LAP can be used wet and dry. The advantage of wet sharpening is that you remove the grinding residues and lubricate the stone. With wet sharpening only use water never oil. If you only use the sharpening stone for dry sharpening we recommend that you regularly clean the surface. This way you remove the sharpening residues from the previous session(s) and the stone remains in optimum condition.
Please note:The holder that surrounds each stone is about 5.5 mm wider on either side than the stone. This protects your fingers very well but ensures that sharpening the edge close to the handle can be difficult because the holder can bump against the handle. The same applies to the sharpening of knives with a larger ricasso or crop that extends to the cutting surface.
Grit size EZE-LAP
EZE-LAP makes diamond abrasive products with five different grit sizes. These grit sizes are also associated with a colour, so you can quickly see which grit size you are sharpening. In brief:
- Extra coarse: green, 150 grit. For extremely fast sharpening and shaping of a very blunt or damaged edge.
- Coarse: black, 250 grit. For quick sharpening and restoring a blunt or damaged edge:
- Medium: purple, 400 grit. For quick sharpening, shaping and a solid finish of a blunt cut.
- Fine: red, 600 grit. Suitable for almost all sharpening jobs. It sharpens blunt edges in the foreseeable future and ensures a sharp finish.
- Super fine: blue, 1200 grit. For a razor-sharp and polished edge with a very fine finish.
For the sublime finishing and polishing of the edge of your knife, EZE-LAP also has a ceramic sharpening stone. Recognisable by the white colour of both the stone itself and the handle.
