The Kai Shun Tim Mälzer paring knife is designed by top chef Tim Mälzer. These knives are made with Kai's famous damasque-layered metal, combined with a very hard core of VG-MAX steel. The core of the blade is rust-resistant on the outside with 32 layers of damasque steel. The hardness of these knives is 61 ± 1 HRC, which is exceptionally hard. As a result they retain their sharpness very long. The handle is made of brown walnut wood and is very comfortable in the hand for both lefties and righties. This paring knife is ideal for peeling fruit and vegetables such as potatoes and apples. All in all a beautiful functional addition to your kitchen.
