## Laguiole en Aubrac cutlery set: stainless steel blade

The blade is made from stainless 12c27 Sandvik steel. A type of steel with a relatively high carbon content making the knife razor-sharp and rock-solid. Nevertheless, it isn't a steel that is prone to rust or get ugly spots. It's also easy to sharpen if the knife starts to lose some of its sharpness over time. Because of the smooth edge, the knife will cut through the meat gradually. This is in contrast with a serrated edge which pulls the fibres apart. This keeps the meat juicy and tender.

The handles are made from wenge wood. This is a dark, hard type of wood with a clear pattern. This type of wood is known for its fancy look and feel and is in nice contrast with the light steel. The handle is enhanced with additional decorations. The spine is embellished with file work that was applied by hand, the characterizing Laguiole bee and the scales are attached with rivets. In the middle of the handle these rivets are shaped like a shepherd's cross. This cross refers to the legend of catholic shepherds who, during their crusades to Spain, wanted to pray far away from a church or chapel. They put the knife in the ground to say a prayer, with the cross facing towards them.
