Are your knives in need of sharpening?

With this **Wüsthof ceramic sharpening steel 4455, 26 cm** you keep your kitchen knives in top condition. The sharpening steel has a factory grit size of 1000, which according to Wüsthof corresponds to the Japanese grit 800. Fine sharpening steel that can be used to give that little bit of extra sharpness to your knives that are not yet blunt.

 This ceramic sharpening rod is very hard but takes a little less material than diamond. Tastes differ of course, but considering the life of your knives, ceramics are probably the better solution. Especially when using the kitchen knives frequently. Take careful attention to the length: the sharpening steel should be at least as long as the longest kitchen knife you want to sharpen.

Kwaliteit, afwerking, ergonomie allemaal perfect. Makkelijk de goed hoek aan te houden. Ik twijfelde tussen Korrel 800 en 3000. Een aanzetstaal (alleen richten van de vouw) heeft bij mijn messen vanwege de hardheid geen zin.
Grappig/mooi is de blauwe afwerking. Helaas blijkt de blauwe 800 evenwel toch vrij grof, je lemmet is na behandeling ronduit te ruw om goed te snijden. Het alternatief (korrel 3000) is zo "zoet", dat het te weinig doet voor even "snel tussendoor". Gewoon echt slijpen blijft natuurlijk het best, maar voor even snel (en zonder schade) je mes bijwerken onder het werk, zou wellicht plm korrel 1500-2000 beter zijn. 

Cuts very quickly. Only 5-10 strokes needed on each side to get the knife in perfect cutting condition. Maybe slightly coarse for my liking but this does help with the speed of cutting i suppose. Doesn't give a polished edge but leaves the knife very very sharp.

Für hochwertigere Messer sollte ein feinerer Stab zum Einsatz kommen .
