The Naniwa Chosera 1000 whetstone uses magnesia as binder for the abrasive, in this case white aluminium oxide.  

  


The Chosera stones do not soak up any water so the stones do not need to be sprinkled with water frequently. This makes Chosera stones rather easy to sharpen with. Because of their hardness you will not cut into the stone easily and sharpening with these stones will take less time. Their hardness make them a good choice for knives made from hard steel.  
  


Splash with water before and during sharpening, do not soak or store in water.  
  

**About grit sizes**  

Whetstones come in various grit sizes. The higher the number, the finer the grit. A finer grit results in a sharper knife. Sharpening a really dull knife on a fine grit will take much time, so you will need to treat it on a coarser grit first.  
  



* 120 - 600: Appropriate when real dull knives need to be brought back in the right shape

* 800 - 1,000: Appropriate to sharpen knives that were already in a reasonable state

* 2,000 - 3,000: For a result sharper than most knives are when they leave the factory

* 5,000 - 12,000: To polish the knife and get a razor sharp edge



**Remarks pertaining to Chosera sharpening stones**  

During manufacture, Chosera sharpening stones are bound with magnesium. This superior production method guarantees superb results. However, these magnesium-bound stones are more prone to developing hairline cracks. To prevent this from occurring, it is important NOT to use too much water when wetting Chosera sharpening stones. So Chosera stones should NEVER be left to soak in water for a prolonged period of time! It is also important to dry these stones thoroughly after use and store them in a dry, dark place.

Om zelfstandig als thuiskok scherpe messen te willen hebben, besloten om slijpstenen aan te schaffen.
Na menig onderzoek uitgekomen bij de Chosera stenen.

Iets duurder dan de rest, maar een stuk dikker en groter dan de concurrenten.
Dit zorgt er voor dat het slijpen voor mij als beginner makkelijk is (bedankt voor de instructieilmpjes) en dat de steen lang mee gaat!

Ik ben van plan nog in ieder geval een 3 of een 5000 steen te kopen en dan weet ik zeker dat ik weer hier ga bestellen i.v.m. De snelle levering. Buiten dat is de site ook erg overzichtelijk en hebben jullie een goed aanbod.

Sehr guter Wasserstein, entspricht genau meinen Vorstellungen. Ist mein erster versuch, hat sofort hervorragend geklappt, habe ihre Videoanleitungen angesehen und auch ihre Liste zum einstellen des richtigen Schleifwinkels hat mir sehr geholfen. Habe damit ein Sanduko Damastmesser geschliffen, dann mit dem Wasserstein 3000/10000 nachgeschliffen, hat tip top geklappt.
Den Tomatentest sofort bestanden.

Deze steen gekocht in een set van 400, 1000, 3000 en 5000. Door gebruik van meerdere stenen gaat het slijpen sneller. De stenen zijn hard en je ziet het slijpsel al snel van je mes komen. Prima aankoop.

Relativ hart gebundener Wasserstein. Super in der Handhabe. Nicht gerade billig, aber man bekommt auch einiges fürs Geld ;)

Erstaunlich dabei vor allem der schnelle Materialabtreag und das feine Schliffbild.
Mein vorheriger(zugegeben deutlich günstigerer) Wasserstein war geringfügig langsamer im Abtrag, aber deutlich gröber im Schliffbild. Trotz nominell gleicher Körnung.

Würde ihn mir wiederholen. Weitere Neuanschaffungen werden wohl auch aus der Chosera-Serie. Hat mich überzeugt.
