Cutting has largely to do with getting through resistance. The thicker the blade, the more resistance it encounters while cutting. A bigger blade pushes the material further apart and can get ‘stuck’ between both sides of the product.
Knives by Robert Herder are largely hand-made, which can result in a somewhat longer delivery time. This also means that the delivery time can sometimes be longer than on our site. When the knife is ‘in stock’ on the website we do actually have it!
