The blade is made from ice-hardened Friodur steel. During this process the steel is heated in 4 stages to 1000°C and cooled to-70 °C. Zwilling perfected this technique, and guarantees optimum sharpness, sustainability, elasticity and corrosion resistance. You also sharpen the knife in five steps. The result is a perfectly sharpened knife. The crop of the knife does not extend to the edge of the blade to make sure you can easily sharpen it on a sharpening stone.
Thanks to the seamless construction and the materials used, knives from the Zwilling Pro collection are dishwasher proof. We do, however, recommend washing them by hand because the detergent in a dishwasher can affect the knives in the long run.

Great investment for those who love to use one knife for almost everything in the kitchen. Great quality blade from Zwilling as expected. The handle that transition gracefully into the blade is very comfortable. You would only find this out if you use a pinch grip to hold a knife, which is arguably the proper way to hold it. Much more comfortable than the Professional S or the Four Star. No bolster design means it has to be used more carefully. On the bright side, it means you can use the near end of the blade for finer cutting moves. This blade, being 3cm longer than the regular 20cm ones, is great for making long slicing strokes, which makes for cleaner and safer cuts. Will work really well for people who are taller and have been comfortable with 20cm knives and want to step up.
