I bought this for my son who is an apprentice chef, I am a keen amateur cook. I chose this for him as I thought it combined the virtues of both European and Japanese knives. In particular the curved blade and sharp point from the European side. My son has found the knife to be excellent for all aspects of food prep., little need for any other knife, and I thought the price to be reasonable. I have just sharpened the knife which took an excellent edge (razor sharp) and I think better than from new which was also very sharp. The other knife I purchased was a paring knife which backed up the Santoku nicely.
