The **de Buyer Prima Matera Tradition copper sauce pan, 14 cm** is a small sauce pan with high rim. As such the pan is perfect when preparing sauces. You can, however, also use the pan to prepare small stews or heat up soup.

## De Buyer Prima Matera Tradition: copper, stainless steel and cast iron.

The pans from the Prima Matera Tradition collection are, except from the cast iron handle, the same as the standard Prima Matera collection. This solid handle ensures you have a lot of control over the pan. The pan is amazing to use and looks very fancy. Copper is one of the best heat conductors and distributes heat exceptionally well. It's not without reason that copper pans have been used by top chefs worldwide for decades. Controlling the temperature is easier in this pan. This makes it highly suitable for making sauces or melting chocolate. The inside of the copper pan is made of stainless steel, As such it is easier to clean. The ergonomic handle is also made of stainless steel and doesn't get hot during cooking. The pan is suitable for all heat sources. This includes induction, thanks to the magnetised base. ## Copper pans: maintenance

The copper Prima Matera pan needs a bit of maintenance to keep it in top condition. Regularly polish the outside of the pan with [de Buyer copper polish](/en/pt/-de-buyer-copper-polish-150-ml-4200-01n.htm). This preserves the beautiful copper colour. Clean the pan after each use with water and a mild detergent. Are there still food residues in the pan? Fill the pan with lukewarm water and mild detergent and let it sit for a few hours. Then clean the pan with a sponge. To prevent rust from forming, we strongly advise against cleaning it in the dishwasher.

## Pans with no PFAS, PFOA or PTFE

The abbreviation PFAS stands for per- and polyfluoroalkyl substances. These are man-made substances that do not naturally occur in the environment. Some examples of PFAS are GenX, PFOA (perfluorooctanoic acid) and PFOS (perfluorooctanesulfonic acids). PFAS is an umbrella term for all these substances, which are used in many products, including frying pans, grill pans and wok pans. PFAS have useful properties: among other things, they are repellent to water, grease and dirt. However, we now know that PFAS are harmful to health. Teflon is the commercial name for various plastic fluoropolymers, such as PTFE (polytetrafluoroethylene). PFAS is used to make these plastic fluoropolymers. Teflon provides the product with a water-repellent and dirt-repellent layer, and it is also heat-resistant. PTFE also allows two surfaces to slide over each other easily. That is why PTFE can be found in pans with a non-stick coating. In other words: they're all the same thing. **This pan is free from PFAS, PFOA and PTFE**.
