The Kai Shun Classic DM-0761 is a flexible filleting knife made from AUS8A steel. A stainless and rock-solid type of steel that is slightly flexible. The latter is exactly why the knife isn't made from VG10 steel, compared to the rest of the Shun Classic collection. Thanks to the flexible blade filleting will be a piece of cake. With this knife you can easily remove the skin from the meat and the meat from the bones. Also when boning poultry this filleting knife can come in handy. With it you are left with more meat and less waste.

Like all other knives from the Shun Classic collection this filleting knife is enhanced with a D-shaped handle made from laminated pakka wood. This dark wood contributes to the stunning overall design of the knife. The handle seamlessly merges with the blade and the balance is excellent.
