The **Skottsberg The Original Carbon Steel 532665 crêpe pan 28 cm** is a medium-sized crêpe pan that allows you to quickly whip up a delicious stack of pancakes for the whole family. This versatile carbon steel pan can withstand high temperatures and feels just as at home on the modern cooker as over a wood fire in the garden. ## Skottsberg carbon-steel pans

Skottsberg Carbon Steel pans are made from sheet steel. Sheet steel pans can be made thinner and lighter than cast iron pans, making them easier to handle. The pans in this series feature a hollow handle that saves weight and makes sure the handle stays cool to the touch when you're cooking. 

Skottsberg's carbon steel pans are all pre-seasoned with a natural oil, creates a patina. This eliminates the need for a synthetic non-stick coating. It's better for your health! In Skottsberg's range of carbon-steel pans, you will find frying pans, crêpe pans and woks.  

## How to use a Skottsberg carbon-steel pan

Because the pan has no non-stick coating, it can withstand very high temperatures. It is suitable for all heat sources, including induction and oven use. The natural non-stick layer is a patina that will improve over time. When the pan heats up, the non-stick coating will give off a delicious scent. After the natural non-stick coating has been well-developed over time, you can roast or fry with relatively little butter or oil. Be careful with acids such as lemon, white wine and tomato. Acids can negatively affect the patina. Steel cookware should be avoided for the same reason. 

## Skottsberg carbon-steel pan: maintenance

Only wash this pan with hot water and a brush. Soap is out of the question and a dishwasher will cause irreparable damage to the pan. These pans require special treatment, but when used correctly, they are a pleasure to work with. Periodically put a layer of coarse salt in the pan and heat it for around ninety seconds. The salt will burn odours and suchlike off the patina. Rinse the pan, dry it with kitchen towel and lightly coat it with some oil before storing it. If the natural non-stick coating is damaged, the pan should be seasoned again.
