How do you use a Japanese water stone?
Before use you need to submerge the stone in a tub of water for about five minutes. Until you no longer see bubbles coming from the stone. Place, before sharpening, the stone on top of a (not included) universal stone holder. The less contact the stone makes with the surface the less the water will seep through the stone. This is especially key for the 220 stone because the water will easily seep through because of the coarse grain.
Make sure that the surface of the stone remains wet while you are using it. If it isn’t wet you will be disappointed with the results and you could even damage the stone. Sharpen the knife on one side until you feel a burr over the entire length of the edge. Subsequently sharpen the other side of the edge until you feel another burr. Now you need to alternately move the edge over the stone to gently remove the burr. After you have removed the burr you can switch to a finer stone
