Buying a Japanese bread knife

Japanese bread knives have an interesting background. The bread knife itself is not originally a traditional Japanese knife, like a santoku, nakiri or yanagiba is. Historically speaking, bread simply plays a smaller role in Japanese cuisine than rice, noodles and fish. So the shape of the bread knife is mainly Western. But Japanese knife makers have given it their own twist.

What makes a Japanese bread knife unique lies mainly in the finish and cutting feel. Japanese brands are known for thin blades, sharp edges and refined balance. With bread knives, you notice this in the way the knife goes through the crust. Less tearing, fewer crumbs and more control. Many Japanese bread knives feel light and precise, so you do not have to push hard.

What is a Japanese bread knife?

Japanese bread knives often have a distinctive Japanese-style handle, the so-called WA style. This can be round, oval, octagonal or D-shaped. They are often made from beautiful wood species and feature a ferrule that protects the handle and often also contributes to the knife’s balance. These days, you’re also seeing more and more Japanese bread knives with Western-style handles. These are often somewhat larger and made from water-resistant materials such as micarta or G10.

In addition, more luxurious models regularly feature a blade of beautiful damascus steel. You can recognise this by the layered pattern in the steel: subtle, elegant and slightly different on every knife.

So Japanese bread knives vary considerably in appearance. Some models are sleek and modern, with a stainless steel blade and a low-maintenance plastic handle. Other knives feel almost artisanal, with damascus steel, a wooden handle and a traditional Japanese design.
