Features of Miyabi chef's knives

Because Miyabi knives have a strong Japanese influence, these chef's knives are called Miyabi gyutohs. That is the traditional Japanese name for a chef's knife. This knife has a slimmer, generally longer blade with a tip that more closely resembles the Western chef's knife and is intended for versatile use in the kitchen. Although a Miyabi santoku is technically also a chef's knife, it stands out as a different product type due to its specific blade shape: a wider blade with a relatively straight edge and a rounded tip (sheepsfoot).

In addition, these Miyabi knives feature a core of a hard type of steel surrounded by multiple layers of damascus steel. The handles of these knives are just as special as the blades. Often made from premium woods and with beautiful details and finishes.
